Easter Biscuits

  • Half pound self raising flour
  • 4ozs butter
  • 4ozs castor sugar
  • Little grated lemon rind
  • 1 egg
  • 2ozs currants

Rub the butter into the flour, then add sugar, lemon rind and currants.
Moisten with the beaten egg. Roll out ¼ inch thick and cut into biscuits with round fluted cutter.
Bake on a tray for 20 minutes with Gas mark 4.
Sprinkle with castor sugar as soon as they are removed from the oven.

Apple Sweet

For 2 people.

  • Stew a few apples and leave to cool
  • 2ozs butter
  • 2ozs sugar
  • 4ozs self raising flour
  • 1 egg

Cream butter and sugar well together, then add egg, till nice creamy mixture.
Slowly add flour. Mix all together till nice and smooth.
Pour the stewed apples into a greased pie dish, then cover with the mixture.
Bake gas mark 4, middle shelf for about 30 minutes.
Do not open oven door whilst cooking.
Serve hot or cold with evaporated milk or custard.
