Home Made Liqueurs

Ginger Brandy

  • 2ozs of Jamaica ginger
  • 1 quart of brandy
  • Half a pint of water
  • 1lb of sugar
  • 2ozs of juniper berries [mixed black and white]

Crush finely the ginger and juniper berries and put them in a wide neck bottle, then pour in the brandy. Seal the bottle/s and let the mixture stand in a warm place for three days, shake 3 to 4 times a day during that period. On the third day boil the sugar and water to a thick syrup, when cool add to the brandy. Prior to mixing sieve the ginger etc through a fine cloth. When cold combine both mixtures and seal and store for use.

Vanilla Liqueur

  • 2 Vanilla pods
  • 3 pints of brandy or gin
  • 1lb of loaf sugar
  • 1 pint of water

Break the pods into short lengths and place in a bottle with the spirits, seal and allow to infuse for 14 days. On the fourteenth day boil the sugar and water into a syrup, and strain the infused spirit into the syrup, when cold bottle for use.
