Egg, rice and cheese Pancakes

Boil four ounces of rice until cooked. When cold add a tablespoonful of grated cheese, a hard-boiled egg finely chopped, pepper and salt to taste. Bind with beaten and roll out to half inch thickness and cut into flat cakes, cover with egg and breadcrumbs and cook in boiling fat. Serve with parsley sauce.

Potato Sausages

Boil and mash some potatoes, season, make into a stiff paste with a little beaten egg and flour, then roll out and cut into squares. Make a forcemeat with some breadcrumbs slightly moistened with water, add a teaspoonful of chopped herbs, a small onion finely grated and a half-ounce of vegetable butter. Mix well and place a small quantity on each square of potato. Roll up and dust with flour, egg and breadcrumbs and cook in boiling fat until brown. Serve with tomato sauce.

Macaroni Fritters

Boil three ounces of macaroni until tender then add a minced onion, two tablespoonfuls of breadcrumbs and a chopped tomato. Bind with a beaten egg and season then spread on a plate to cool. Cut into pieces and dust with flour, egg and breadcrumbs, then cook in boiling fat until brown.

Lentil Balls

Wash half a pint of lentils and then cook until soft in one and a half pints of water, drain any excess water, season with pepper and salt then add a small shredded onion and a small piece of butter. Flour the hands and form into balls, egg and breadcrumb, cook in boiling fat. Serve with sauce of choice.

Scotch Egg

Cooking time 2 minutes

Boil one or two eggs for ten minutes and then remove the shells. Roll the shelled eggs in flour and then in forcemeat. Dust with flour, egg and breadcrumbs. Cook in boiling fat until browned. Cut each egg in half through the middle and decorate with chopped parsley and serve on a ring of fried bread covered with a slice of tomato.

Egg and Tomato Scramble

Cooking time 3 minutes.

Beat up two whole eggs. Make hot in a pan one ounce of butter, chop a slice of tomato very finely, ad to the beaten egg and stir in the pan till set. Serve on toast.

Tomato Eggs

Scrape the centre out of a large tomato, break a raw egg right into the hollow and cook in hot fat in a basket. As soon as the egg is set dish the tomato on a piece of fried bread.

Cheese Eggs

Poach one or two eggs in hot fat. Serve on squares of fried bread and sprinkle over with some grated cheese, serve hot.

Egg and Cheese Scramble

Melt one ounce of butter in a pan, add two tablespoonful of milk, beat up an egg and add to the butter and milk. Stir until just setting and then add one tablespoonful of white crumbs and one of grated cheese. Season with salt and cayenne and serve on fried bread.

Roast Tomato

Cooking time 2 to 3 minutes.

Well dry the outside of some good size tomato; score the skin in four places, place in boiling fat. The skin will roll back and should form four leaves. Serve on bread fried in boiling fat and sprinkled with grated cheese.
