Summer Fish Dish

  • 4, 6 ounce Cod steaks.
  • 1 lemon (rind and juice).
  • Sauce:-
  • 6 ounces Cucumber diced, reserve a few slices for garnish.
  • 4 tablespoons Natural low fat yoghurt.
  • 2 ounces Cottage cheese.
  • Pepper and salt.
  • Cucumber slices and Parsley for garnish.

Place the fish in an oven proof dish with the lemon rind and juice, and cover. Cook in centre of a pre-heated oven at 180 C (350 F), Gas No. 4 for 20-25 minutes. Mix all sauce ingredients together and serve on top of the cod stakes. Garnish with cucumber slices and parsley.

Anchovy and Pasta Salad

  • 1 ounces Anchovies (chopped).
  • 4 ounce packet Frozen French beans, cooked according to instructions.
  • 6 ounces Pasta Shells, cook in boiling, lightly salted water for 13 minutes and drained.
  • 4 ounces Mushrooms, washed and sliced.
  • 1 teaspoon Lemon juice.
  • 2 tablespoons Parsley.
  • Dressing:-
  • 4 tablespoons Polyunsaturated Oil.
  • 2 tablespoons Vinegar.
  • Quarter teaspoon Dry mustard.
  • Pinch of sugar.
  • Salt and pepper.

Place all dressing ingredients in a screw top jar and shake for a few seconds until thoroughly mixed. Mix together in a bowl with all the other ingredients and toss in the dressing.

Serves 4.

Fish Quiche

  • 6 ounces Shortcrust pastry.
  • 2 Eggs.
  • 5 ounces Low fat yoghurt.
  • Quarter pint of skimmed milk.
  • 8 ounces of fish (your choice).
  • 6 ounces Low fat cheese.
  • 2 tablespoons grated Parmesan cheese.
  • Salt and pepper.

Roll out the pastry on a lightly floured surface and use to line a 8 inch flan dish or ring placed on a baking sheet. Bake blind in the oven at 200C (400F) Gas mark 4, for 10-15 minutes. Whisk the eggs, milk and yoghurt together in a bowl. Flake the fish, crumble the low fat cheese and add to the egg mixture with the Parmesan cheese and plenty of seasoning. Pour into the flan case and bake in the oven at 190C (375F) Gas mark 5 for 35 minutes until golden. Serve hot.
