Tzaziki

  • Half a medium cucumber, diced.
  • 125g. (5 ounces) Natural yoghurt, preferably firm set.
  • 15 ml. (1 tablespoon) chopped mint.
  • 1 clove Garlic, skinned and crushed.
  • Low Salt and pepper.

Place the cucumber in the serving bowl. Pour over the yoghurt, add the mint, garlic, season and mix well. Cover and chill before serving.

Serves 4 as a side salad.

Chinese 'Bite' Dressing

  • 50 ml. (2 fluid ounces) Polyunsaturated oil.
  • 14g. (half ounce) Light brown sugar.
  • 14g. (half ounce) Soya sauce.
  • 7½ ml. (half tablespoon) White wine vinegar.
  • 10g. Half ounce Ground ginger.

Place all ingredients in a bowl and whisk thoroughly.

Serve separately or over a fresh salad.

Green Herb Dressing

  • 250 ml. (half pint) Reduced calorie mayonnaise.
  • 250 ml. (half pint) Natural yoghurt.
  • 5 ml. (1 teaspoon) Freshly snipped dill.
  • 30 ml. (2 tablespoons) Freshly chopped parsley.
  • 30 ml. (2 tablespoons) Fresh Chives.
  • 20 ml. (2 tablespoons) Fresh Tarragon.
  • 5 ml. (1 teaspoon) Thyme or Marjoram.
  • 7 ml. (3 teaspoon) Basil.
  • Paprika and low salt to taste.

In a small bowl, combine ingredients in order listed and mix thoroughly. Adjust seasoning to taste. Cover and refrigerate for several hours or overnight to blend flavours.

Serve with green salad or cucumber and tomatoes.

Serves 6 standard portions.
