Greek Salad

  • 2 Mediterranean or beefsteak tomatoes, cut into eights.
  • 1 Medium green pepper, seeded and thinly sliced.
  • Half a cucumber, thickly sliced.
  • 50g. ( 2 ounces) Black or stuffed olives, stones removed.
  • 100-150g (4-6 ounces) Feta cheese, diced.
  • 120 ml (8 tablespoons) Olive oil.
  • 30-45 ml. (2-3 tablespoons) Lemon juice.
  • Low Salt and pepper.

Arrange the tomatoes, pepper, cucumber and olives in a salad bowl, reserving a few for a dice garnish.

Pour over the polyunsaturated oil, followed by the lemon juice and season well. Toss the salad together. Garnish with the remaining cheese cubes and serve.

Serves 4 as a side salad, or 2 as a main course.

Three Bean Salad

  • 50g. (2 ounces) Chick peas (dried).
  • 50g. (2 ounces) Haricot beans (dried).
  • 50g. (2 ounces) Red kidney beans (tinned).

Soak Chick peas and haricot beans separately in water overnight.

Drain, put into fresh water, bring to the boil, simmer until cooked. Drain, refresh under cold running water.

Combine with sharp spicy dressing (see below).

Spicy Dressing

  • 75 ml. (3 fluid ounces) Polyunsaturated oil.
  • 37½ ml. (1½ fluid. ounces) White wine vinegar.
  • Three quarters of juice and zest of one lemon.
  • Half tablespoon of all spice.
  • 7½ ml (half tablespoon) of seasoning and ground coriander sprinkled over.

Combine all ingredients, whisk thoroughly together.
