Sausage Spirals

Cooking time: 15 minutes Yield: 16 spirals

  • 1oz All-Bran Cereal or Bran Buds Cereal 25g
  • 4 tbsp Milk 4x15 ml sp
  • 5oz Self-raising flour 150g
  • 1oz Grated cheese 25g
  • 1½oz Butter 40g
  • ½ teasp Paprika pepper ½ x 5 ml sp
  • Ready-made mustard
  • ½ level teasp Paprika pepper ½ level 5 ml sp
  • ½lb Thin sausages 225g

Place All-Bran or Bran Buds in bowl and soak in milk. Sieve together flour and salt and rub in butter until mixture resembles fine breadcrumbs. Add cheese and paprika together with bran mixture. Knead until smooth. Roll into a square and spread pastry with mustard. Cut sausages in half. Cut pastry into strips 1/2 (1.3 mm) wide and wrap around sausages, slightly overlapping edges of pastry. Place on a greased baking tray and bake in a hot oven, 220°C (425°F) Gas Mark 7, for 15 minutes.

Serve immediately.

Slimmers Bran Flan

Cooking time: 25 minutes (base only), Yield:4 servings

  • Base
  • 5oz Plain flour 150g
  • 3oz Low fat spread 75g
  • 1oz All-Bran Cereal or Bran Buds Cereal 25g
  • Water to mix
  • Filling
  • 1lb Cottage cheese 450g
  • 3½oz Prawns 90g
  • 1 Stick of celery (chopped) 1
  • 2 tbsp Chopped cucumber 2 x 15 ml sp
  • 3-4 Spring onions 3-4
  • Salt and pepper
  • Small green pepper (deseeded and sliced) 1

Put flour into a bowl, and rub in the low fat spread. Stir in All-Bran or Bran Buds. Add enough water to mix to a firm dough. Roll out and use to line an 8" (20cm) round flan ring. Prick base thoroughly with a fork. Bake in a moderately hot oven, 200°C (400°F) Gas Mark 6, for 25 minutes. Remove and cool. Drain cottage cheese. Mix in the prawns, celery, cucumber, spring onions and seasonings. Spread mixture into the flan case. Decorate with sliced pepper.

Cottage Cheese Flan

Cooking time: 8-10 minutes (base only), Yield: 4 servings

  • 3oz All-Bran Cereal 75g
  • 2oz Butter or margarine 50g
  • ½ teasp Oregano ½ x 5 ml sp
  • Filling
  • 8oz Cottage cheese 225g

Crush All-Bran slightly, add butter and oregano and mix until well blended. Press mixture evenly into a base of an 8" (20 cm) round loose-bottomed tin. Bake in a moderately hot oven, 190°C (375°F) Gas Mark 5, for 8-10 minutes. Cool completely. Add cottage cheese. Remove the base from the tin, and serve the flan on the metal base.
