Bran Cheese Straws

Cooking time: 20 minutes, Yield: Approx 160

  • 4oz Butter or margarine 100g
  • 4oz All-Bran Cereal (crushed) 100g
  • ½ teasp Salt ½ x 5 ml sp
  • ½ teasp Cayenne pepper ½ x 5 ml sp
  • 4oz Self-raising flour 100g
  • 5oz Cheddar cheese (grated) 150g
  • 4 tbsp Water 4 x 15 ml sp
Rub the butter into the flour until this resembles fine bread crumbs. Add the All-Bran, salt, cayenne pepper, and grated cheese and mix well together. Add the water and mix to a firm dough. Knead lightly and roll out thinly to 1/4" Cut into fingers 1/4" wide by 3" long. Place on greased baking tray and bake in a moderate oven, 180°C (350°F) Gas Mark 4, for about 20 minutes, or until brown. Leave to cool on baking tray, remove and store in an airtight container.

Cheese Savouries

Cooking time: 12 minutes, Yield: Approx 2 Dozen

  • 2oz Butter (softened) 50g
  • 4oz Cheddar cheese (grated) 100g
  • 2oz All-Bran Cereal or Bran Buds Cereal 50g
  • 2oz Plain flour 50g
  • pinch Salt pinch
  • pinch Cayenne pepper pinch

Beat butter and cheese together until light and fluffy. Stir in remaining ingredients, mix well and knead together, if necessary. Place walnut-sized balls onto baking trays. Flatten with fork dipped in flour. Bake in moderate oven, 180°C (350°F) Gas Mark 4, for about 12 minutes. Remove immediately from baking trays.

Best eaten on same day.

Savoury Herb Scones

Cooking time: 20-25 minutes, Yield: 6 Scones

  • 2oz All-Bran Cereal 50g
  • 4 tbsp Milk 4 x 15ml sp
  • 4oz Self-raising flour 100g
  • 3 level teasp Baking powder 3 x level 5 ml sp
  • 1½oz Margarine 40g
  • 2oz Onion (finely chopped) 50g
  • 3oz Cheese (grated, strong flavoured)75g
  • 1 teasp Mixed herbs 1 x 5 ml sp
  • ½teasp Salt ½ x 5 ml sp
  • pinch Pepper pinch

Put the All-Bran and milk into a basin and leave to stand.

Rub the margarine into the sieved flour and baking powder until it resembles fine breadcrumbs. Add 2 oz grated cheese and the other dry ingredients and mix thoroughly. Add the All-Bran and milk mixture and mix to a dough.

Roll dough out to 1" thick and cut with a 3- cutter. Place onto a greased baking tray. Brush with milk and sprinkle with remaining grated cheese. Bake in a moderate oven, 180°C (350°F) Gas Mark 4, for 20-25 minutes, or until cooked.
Serve warm.
