Fruit Crumble

Cooking time: 20-30 minutes

  • 1-1½ lb Lightly stewed, bottled or tinned fruit 450-675 g
  • 4oz Flour — plain or self-raising 100 g
  • 2oz Butter or margarine 50g
  • 2oz Demerara sugar 50g
  • 1oz All-Bran Cereal (crushed) or Bran Buds Cereal (not crushed) 25g

Drain the fruit well, place in an 8" (20 cm) ovenproof pie dish and sweeten if necessary. Rub the fat into the flour until mixture resembles fine breadcrumbs. Blend in the sugar and All-Bran or Bran Buds. Sprinkle over the fruit and bake in a moderately hot oven, 200°C (400°F) Gas Mark 6, for 20-30 minutes until crisp and golden.
Serve hot with custard or cream.

Hot Grapefruit

Cooking time: few minutes

  • 2 Grapefruit 2
  • 1oz All-Bran Cereal 25g
  • 1 Banana 1
  • 1oz Sultanas 25g
  • ½oz Brown sugar (optional) 15g
  • 4 teasp Rum 4 x 5 ml sp

Cut grapefruit in half. Scoop out and reserve the flesh. Mix the grapefruit with the sliced banana, sultanas and All-Bran. Put mixture into the skins. Sprinkle each half grapefruit with brown sugar and a teaspoon of rum. Place under the grill for a few minutes.
Serve hot.

Ice Cream Topping

Cooking time: 5 minutes

  • Topping
  • 3oz All-Bran Cereal (slightly crushed) or Bran Buds Cereal (not crushed) 75g
  • 1oz Margarine or butter 25g
  • 1oz Icing sugar 25g
  • Additions
  • Nuts, Cherries, Coconut, Mixed fruit and Chocolate chips

In a bowl, mix the All-Bran or Bran Buds with the icing sugar. Melt the margarine or butter, pour over the bran and icing sugar and mix until well blended. Place mixture on a baking tray and bake in a hot oven, 190°C (375°F) Gas Mark 5, for about 5 minutes or until crisp. Cool completely and add nuts, cherries, mixed fruit, chocolate chip or coconut to taste.
Sprinkle onto ice cream or other desserts.
