Chestnut Stuffing

Cooking time: same as turkey Yield: Sufficient to stuff a medium sized turkey.

  • 6oz White breadcrumbs 175g
  • 2oz All-Bran Cereal (crushed) 50g
  • 1 Large onion (chopped) 1
  • 2 Large cooking apples (cored and chopped) 2
  • 15½oz Chestnut puree (unsweetened) 435g
  • 4oz Sausage meat (pork) 100g
  • Salt and black pepper

Fry the onion in a little butter. Transfer the onion to a large mixing bowl, add the remaining ingredients and season well. Mix thoroughly.

Stuffing Mix

Cooking time: 1 hour

  • 5oz Margarine or a mixture of margarine and lard 150 g
  • 2 Eggs (beaten) 2
  • 5oz Self-raising flour 150g
  • 1 teasp Baking powder 1 x 5 ml sp
  • 3oz Breadcrumbs 75g
  • 2oz All-Bran Cereal (crushed) 50g
  • 2 teasp Thyme 2 x 5 ml sp
  • 2 teasp Parsley 2 x 5 ml sp
  • Pinch Allspice Pinch
  • Salt and pepper
  • 1/4 pint Stock or water 150 ml

Cream the fat until light and fluffy. Gradually add the beaten eggs. Mix well. Add the remaining ingredients and mix well.

Put the stuffing into a well greased dish and bake in a moderate oven, 180°C (350°F) Gas Mark 4, for about 1 hour, or until the stuffing looks firm and brown.

Cut into slices and serve with any kind of meat.
