Cheesy Meat Balls with Tomato and Herb Sauce

Cooking time: 10-15 minutes, Yield: 4 servings

  • Meatballs
  • 4oz All-Bran Cereal 100g
  • 1 Egg 1
  • 2floz Milk 50 ml
  • pinch Pepper pinch
  • ½ lb Minced Beef 225g
  • 4oz Grated cheddar cheese 100g

Combine All-Bran, egg, milk and pepper. Mix well. Leave to stand for about 5 minutes.

Add minced beef and cheese, mixing only until combined. Shape into 1" meatballs (makes approx. 12).

Place in a single layer on a greased shallow tray. Bake in a moderately hot oven, 200°C (400°F) Gas Mark 6, for about 10 minutes, or until browned. Remove from oven and immediately loosen meatballs from baking tray. Serve hot with Tomato and Herb Sauce (see recipe below) over noodles or rice.

Beef Burgers with Tomato and Herb Sauce

Cooking time: few minutes, Yield: 6 beef burgers

  • 4oz All-Bran Cereal 100g
  • 1 Egg 1
  • 2 fl oz Milk 50 ml
  • pinch Pepper pinch
  • ½ lb Minced beef 225g
  • 1 Onion (chopped) 1

Combine All-Bran, egg, milk and pepper. Mix well. Leave to stand for 5 minutes. Add minced beef, mixing until combined. Leave for 5 minutes and divide into 6 pieces. Shape and grill, or fry until cooked.

Serving Suggestion
Serve hot with Tomato and Herb Sauce (see recipe below).

Tomato and Herb Sauce

Cooking time: 10-15 minutes

  • 12oz Chopped fresh tomatoes 350g
  • 1 tbsp Onion (chopped) 1 x 15 ml sp
  • 1 tbsp Chopped green pepper 1 x 15 ml sp
  • 1 Small clove garlic (finely chopped) 1
  • 1 teasp Cornflour 1 x 5 ml sp
  • 1 teasp Sugar 1 x 5 ml sp
  • pinch Oregano pinch
  • 1oz All-Bran Cereal 25g
  • 1 teasp Fresh parsley 1 x 5 ml sp

In a small saucepan combine all ingredients except parsley. Cook over medium heat, stirring constantly until mixture boils and thickens. Reduce heat and cook about 5 minutes longer, stirring frequently. Stir in parsley. Serve hot with Chicken Stuffed Green Peppers, Cheesy Meat Balls or Beef Burgers recipes.
