Lemon Crunch Cookies

Cooking time: 10 minutes, Yield:2 dozen cookies

  • 8oz Plain flour 225g
  • ½ teasp Baking powder 1/2x5ml sp
  • ½ teasp Salt ½ x 5ml sp
  • 4oz Softened margarine or 100g butter
  • 4oz Caster sugar 100g
  • 1 tbsp Grated lemon rind 1 x 15ml sp
  • 1 Egg 1
  • 3 tbsp Lemon juice 3 x15 ml sp
  • 2oz All-Bran Cereal 50g or Bran Buds Cereal

Stir together flour, baking powder and salt. Set aside. Beat margarine, sugar and lemon rind until light and fluffy. Add egg and lemon juice. Beat well. Add flour mixture and bran, mix until combined. Shape dough into balls about 1 inch in diameter. Place on greased baking sheets, flatten with a fork and bake in a moderate oven, 180°C (350°F) Gas Mark 4, for about 10 minutes or until lightly browned.
Cool on wire racks.

Orange - Lemon Festival Bites

Cooking time: 20 minutes, Yield: 12 Muffins

  • 8oz Flour 225g
  • 2 teasp Baking powder 2x5ml sp
  • 1/4 teasp Bicarbonate soda 1/4X5ml SP
  • 1/4 teasp Salt 1/4 x 5ml sp
  • 2oz Sugar 50g
  • 2oz All-Bran Cereal 50g or Bran Buds Cereal
  • 5oz Milk 150ml
  • 2oz Orange juice 50 ml
  • 2 tbsp Lemon juice 2 x 15ml sp
  • 1 teasp Grated lemon rind 1 x 5ml sp
  • 2oz Vegetable oil 50g
  • 2 Eggs 2

Stir together flour, baking powder, bicarbonate soda, salt and sugar. Set aside. juice, Mix the All Bran or Bran Buds, milk, orange juice, lemon juice and lemon rind together. Leave to stand for 5 minutes. Add egg and vegetable oil. Beat well. Add flour mixture, stirring only until combined. Portion batter evenly in 12 greased bun tins. Bake in a moderately hot oven, 200°C (400°F) Gas Mark 6, for approximately 20 minutes, or until lightly browned. Cool. Top with hot marmalade or apricot puree. Sprinkle with nuts or coconut, if desired.
