Reheating of Meat

Cold Meat Shape

  • ½ lb cooked meat
  • ¼ lb cooked ham
  • 1 hard-boiled egg
  • ½ pint stock
  • ½ oz gelatine
  • Seasonings
  • 1 dessertspoonful chopped parsley

Cut the meat and ham into small dice and slice the egg. Fill a clean plain mould with alternative layers of meat, seasonings, egg and parsley. Don’t press it down. Dissolve the gelatine in the stock and strain it over the meat; turn out when set, and serve, garnished with lettuce and cucumber.

N.B.- Rabbit, chicken, beef, or even a mixture, is very nice for this dish.

Curry Puffs

  • 4 oz minced meat, cooked
  • 1 teaspoonful minced onion
  • 1 teaspoonful curry powder
  • Seasonings
  • A little stock or water
  • Some flaky pastry or rough puff

Roll the pastry very thinly and cut into squares of 4 inches.

For the filling – Mix together the meat, onion, seasonings and curry powder, and enough stock just to moisten the mixture. Put one teaspoonful on each square of pastry, damp the edges and fold over into a triangle. Press the edges together, brush over the tops with little yolk of egg and bake in a hot oven for about 20 minutes [Gastat 8].

N.B.-If fresh meat is used bake for 30 minutes.

Savoury Mince

  • Cooked meat minced
  • 2 onions, large
  • 1 teaspoonful mixed herbs
  • Seasoning
  • 1 dessertspoonful sauce
  • 1 oz butter
  • 4 oz breadcrumbs
  • Stock
  • ¼ pint white sauce

Cook and chop the onions and mix them to the meat, herbs, sauce, seasonings and 3 oz crumbs. Add sufficient stock to have a moist mixture. Fill a greased dish, sprinkle on the rest of the crumbs, put on the butter in small pieces and bake in a hot oven till nicely browned on top, about 15 minutes [Gastat 8].

Tomato Mince

  • 1 lb tomatoes
  • 8 oz cooked minced meat
  • 1 teaspoonful minced onion
  • Stock
  • 1 oz white breadcrumbs
  • Seasonings

Blanch, skin and thinly slice the tomatoes and put half into a greased dish. Mix together the meat and the onion and put it on the tomatoes. Put the rest of the tomatoes on top, season well and pour into the dish sufficient stock to make the mixture fairly soft. Sprinkle on the crumbs, place little dabs of butter all over the top and bake in a moderately-heated oven for 25 minutes. [Gastat 6].

N.B.-If no stock is available, use a little Oxo, Bovril or Marmite dissolved in water.
