Using Cornflour and Custard Powder

Bread and Scones

Plain Cottage Loaf

  • 1 lb flour
  • 1 small teaspoon salt
  • 2 ozs Raisley or 2 teaspoons baking powder
  • About 2 pints water

Sieve the flour, Raisley and salt together in a bowl. Make into a dough quickly with water, adding a little at a time, till you have a moderately soft dough, just firm enough to keep its shape. Some flours require more water than others. Do not knead more than is necessary. This quantity will make two loaves. Divide into four pieces, two rather smaller than the other two. Shape all into round balls. Put the small ones on top of the larger and press the finger through the centre. Place on a greased tin and put at once into a hot oven for about 3o minutes. Regulo 7. Temperature 450°F. If this quantity is made into one loaf, 40-50 minutes baking will be required.

Treacle Scones

  • 1 lb plain flour
  • 1 oz margarine
  • ½ teaspoon baking soda
  • 2 tablespoons black treacle
  • 1 teaspoon cream of tartar
  • Milk — about ¼ pint
  • ½ teaspoon mixed spice

Sieve all the dry ingredients together. Rub in the fat. Make a well in the centre, add treacle and enough milk, about ¼ pint, to make a firm dough. Turn on to a floured board, roll about ¼ inch in thickness, cut into rounds and bake about 15 minutes in a hot oven. Regulo 7. Temperature 450°F.

Honey Scones

  • ½ lb plain flour
  • 2 tablespoons honey
  • 6 ozs wholemeal flour
  • 2 tablespoons Raisley or 2 teaspoons baking powder
  • 2 ozs cornflour
  • 3 ozs margarine
  • ½ teaspoon salt
  • Milk

Sift the flours, cornflour and salt together. Rub in the fat lightly, add the raising agent. Dissolve the honey in a little milk, and mix all to a fairly soft dough, adding more milk as required. Turn on to a floured board, roll about ¼ in thickness, cut into rounds and bake in a hot oven 10-15 minutes. Regulo 8. Temperature 475°F.

Potato Scones

  • ¼ lb flour
  • 2 oz margarine
  • 1 teaspoon salt
  • 1 cup mashed potato
  • 2 teaspoons baking powder
  • Milk

Sift the flour and salt, rub in the fat, add raising agent and potato and mix well. Add enough milk to make a fairly soft dough. Roll out on a floured board to about ½ inch in thickness. Cut into rounds. Put on to a greased baking tin and bake about 15 minutes in a hot oven. Regulo 7. Temperature 450°F.
