Cheese Fritters 1

Cut some pieces of cheese into one-inch lengths and quarter of an inch thick. Dust with flour and dip into batter, cook in boiling fat until brown. Dust with cayenne and serve hot.

Cheese Fingers

Use the trimmings from any pastry you may be using and roll out thinly, then cover with grated cheese and season. Cover with another layer of thin pastry and press edges together. Cut into lengths [seal ends] and cook in boiling fat until crisp. Serve hot.

Cheese Cream

  • 2 ounces grated cheese
  • Half a salt spoonful of made mustard
  • Half ounce of butter
  • 2 tablespoonful of milk
  • One dessertspoonful of white crumbs
  • Cayenne

Heat the milk and butter then add the cheese, mustard cayenne and lastly the breadcrumbs.

Stir until the cheese thickens, add milk if required. Serve on squares of toast.

Macaroni Cheese Croquettes

The remains of some macaroni cheese finely chopped. Make a white sauce using a quarter pint of milk, one tablespoonful of flour, one ounce of butter, one egg and seasoning; then add the cheese and cool. Make into balls cover in breadcrumbs and egg and cook in boiling fat until brown. Serve with grated cheese.

Cheese Crisps

  • Quarter pound of flour
  • One tablespoonful grated cheese
  • One and a half ounces of butter
  • Yoke of one egg
  • Cold water
  • Salt and cayenne to taste

Rub the butter into the flour and add the cheese, season to taste then mix with the yoke of an egg to make a soft dough. Roll out the pastry on a floured board and then cut into thin strips twist them slightly and cook in boiling fat. Place on paper and allow to drain, when dry tie up in bundles with ribbon or cotton and place on lace mat.

Cheese straws

  • 2 ounces butter
  • 3 ounces flour
  • 2 ounces grated Parmesan
  • 1 yoke of egg Cayenne pepper
  • Salt

Rub the butter and flour together and add the cheese, bind together with the yoke of an egg.

Roll out on a floured board, then cut into straws. Carefully place in a basket and into boiling fat, when cooked drain on paper

Cheese Fritters 2

Cooking time 2 to 3 minutes.
Cut some mild cheese into inch squares, sprinkle with pepper and salt, dip in batter and cook in boiling fat until crisp.

Cheese meringues

Cooking time 5 minutes.

  • 3 ounces grated cheese
  • Whites of two eggs [whipped very stiffly]

Mix and form into balls with the fingers and drop into hot fat, cook slowly. They should swell before browning.
